The truffles of Guillaume Gé in the spotlight on the menu

To celebrate the truffle season, chef Jérôme Schilling has just added four truffle-based dishes to the menu of the gastronomic restaurant LALIQUE.

Since the opening of the LALIQUE restaurant in June 2018, the chef has been working with truffle grower Guillaume Gé (Aléna). The truffle knows no crisis. According to research firm Technavio, the market will even double by 2030. The general public increasingly thinks that truffles are made for everyone.

Aléna is 120 hectares of melanosporum truffle fields based in Aquitaine which produce 3 tons of Périgord black truffles each year, sold to the biggest names in world gastronomy, including the chef of the only starred restaurant in Sauternes in the MICHELIN Guide France, Jérôme Schilling.

The special menu features four truffle dishes

The first course is the Bazas beef tartare, creamy Comté cheese and white soy (52€ including tax). If you like beef tartare, you must absolutely taste the one proposed by Jérôme Schilling because it is just unique and exceptional!

The chef also offers a truffle-based fish on the menu. Breton sole, curly cabbage harlequin in ravioli and Nantais butter (72€ including tax). A treat for the pupils and the taste buds.

Also available on this special menu is the Saint Jacques de Port en Bessin, shell trompe l’oeil with Jerusalem artichokes and Basque ham (65€ including tax), a three-star gastronomic experience!

The fourth truffle-based dish is a crispy sweetbread, celery with verjuice, and hazelnuts (68€ including tax).
