Reopening of the Hotel & Restaurant LALIQUE at Château Lafaurie-Peyraguey
The LALIQUE Hotel & Restaurant at Château Lafaurie-Peyraguey is starting its fifth season today. Its chef Jérôme Schilling is preparing to reopen this magnificent Relais & Châteaux establishment and takes stock of a good year 2021.
Originally from Alsace, chef Jérôme Schilling is now well established in Gironde and is preparing for a new season with great ambition and determination.
“Overall, we had a good year,” commented Jérôme Schilling. “The launch of the Terrasse de Lafaurie in May also allowed us to offer a complementary formula to the gourmet restaurant. The catering offer based around a grill with world cuisine has been a great success. Many of our customers at La Terrasse have also discovered the Michelin-starred restaurant during the fall. The hotel also had a good year despite the fact that the foreign clientele was not really there. The end of the year was more difficult because of the new restrictions but we are confident for 2022.”
The Hotel & Restaurant LALIQUE team at Château Lafaurie-Peyraguey is ready for a new season.
“Our objective for 2022 is to develop the hotel clientele. We are betting a lot on foreign customers who were a little absent in 2021. Our 5-star Relais & Châteaux hotel will allow us, we hope, to welcome new customers from all over Europe and other more distant countries. Most countries now allow their nationals to travel again and come and discover our beautiful Sauternes region.”
The LALIQUE* gourmet restaurant will be open from February 3rd. In the spring (from February 3 to April 30, 2022), the restaurant will be closed on Tuesdays, Wednesdays and Saturdays at lunchtime.
This summer (from May 1 to September 30), the gastronomic restaurant LALIQUE* will only be open in the evening (except for group requests). This fall/winter (October 1 to December 31, 2022), the restaurant will be closed on Tuesdays, Wednesdays and Saturday lunchtimes.
The Michelin-starred restaurant LALIQUE reopens this lunchtime with a slightly different winter 2022 menu compared to the autumn 2021 menu where several dishes have been added to the two menus offered.
Chef Jérôme Schilling and his brigade have more than ever the desire to surprise customers with ever more amazing dishes. The whole team has the desire and ambition to earn a second star in the Michelin Guide for Restaurant LALIQUE, the only Michelin-starred restaurant in the Sauternes region since 2019.
For the vegetable menu “Le Terroir du Sauternais”, we find as a starter the Jerusalem artichokes smoked with vine shoots & bergamot and a new starter, the chicken egg marinated in whiskey “The Glenturret” Butternut and pecan nuts.
To follow, the chef offers two other dishes; Range of Betroots « Insolite with Hibiscus » and Cévennes Onions in salted Crust & Aquarello Risotto.
For the starters of the “Grain Noble” menu, we find smoked scallops with Jerusalem artichoke and bergamot vine shoots and, a new dish already included in the “Le Terroir du Sauternais” menu, the chicken egg marinated in “The Glenturret” whiskey Butternut and pecan nuts. As a main course, the chef offers line-caught hake confit in grapeseed oil Blackcurrant vinaigrette with elderflower and “Unusual elderberry” beetroot and the meat is a game bird Mallard Duck, Kolhbari and Red Cabbage
Salmi Gravy.
As for desserts, the chef is introducing a new dessert on the “Le Terroir du Sauternais” menu, the Crêpe soufflée in the interpretation of the 2010 vintage Honey ginger sorbet. The dessert on the “Grain Noble” menu is the Ciron’s Cloud and Lemon Caviar from Aquitaine.
The ephemeral summer terrace will reopen on Sunday May 1
The ephemeral summer restaurant “La Terrasse de Lafaurie” will be open every lunchtime from May 1 to September 30 (except Tuesdays and Wednesdays). In addition to the world cuisine formula around the grill, the chef will offer some more gourmet signature dishes to allow customers to indulge themselves.
New employees for the hotel and the LALIQUE restaurant at Château Lafaurie-Peyraguey will soon be announced and will join the chef and his team this week for this new adventure.
